AROMA ENGINEERING IN BEER WITH MICROWAVE ESSENTIAL OIL EXTRACTION
THE CUSTOMER
In 1986, Teo Musso began a quiet
revolution in the brewery industry
founding Baladin, one of Italy’s
most influential craft breweries. He
started producing his own beer in
a completely revolutionary way,
to create new trajectories made
of research, new techniques,
new strategies, and new ways of
working.
THE CHALLENGE
In collaboration with Milestone,
the brewery implemented a
microwave-based essential
oil extraction technology that
allows the separation of aromatic
compounds from botanicals and
hops without the use of solvents.
THE SOLUTION
One of the most significant
outcomes has been process
optimization. By combining
50% traditional pellet hops and
about 30% extracted essential
oils, Baladin achieved the same
aromatic intensity and character
while reducing hop usage by
approximately 20%.
